More than a traditional wine pairing, Ahi’s beverage experience is a celebration of New Zealand’s makers, growers and distillers.

From local wines and craft beers to spirits shaped by the land, each pour reflects the people who work in rhythm with nature, guided by the seasons, the soil and the elements. Inspired by Papatūānuku (Earth Mother) and Ranginui (Sky Father), this is a journey through Aotearoa told through flavour, craft and connection, celebrating the growers, makers and producers who adapt, create and honour the environment around them.

NZ Beverage Story.

Our curated NZ Wine Story ($150) pairing showcases the best of Aotearoa, celebrating the people, places and craftsmanship behind New Zealand wine. For those drawn to the classic styles of Europe, we reveal the same depth, quality and character found right here at home. Beyond the vine, our bar team crafts thoughtful cocktails using techniques such as fermentation, distillation and bespoke infusions.

Ahi Head Sommelier 

Lucile
Fortuna

Raised in France, Lucile discovered her passion for hospitality in her uncle’s bistro in Lyon before earning her sommelier certification in Tain-l’Hermitage. Seeking to expand her knowledge of New World wine, she moved to Melbourne, where she met Ahi Co-Owner Chris Martin. Together they relocated to Auckland in 2015 and met Ben Bayly, laying the foundations for Ahi. Today, Lucile curates Ahi’s distinctive beverage programme, bringing together a thoughtful selection of Old and New World wines while creating memorable experiences and sharing the stories behind every bottle.

Kit Sainsbury-Canham

As Group Sommelier across Ahi and Origine, Kit Sainsbury-Canham brings a passion for New Zealand’s wine and beverage culture. Raised on Waiheke Island, one of the country’s most celebrated wine regions, he developed an early appreciation for the people, places and craftsmanship behind every bottle. With expertise across wine, spirits and hospitality, Kit curates thoughtful beverage experiences that celebrate provenance, champion exceptional local producers and showcase the diversity of Aotearoa’s drinks landscape.

Anton
Baylon

While studying Hospitality Management at AUT, Anton began his hospitality career as a barback during the Rugby World Cup 2011. Over the years, he progressed through a range of roles to become a Venue Manager, specialising in bar operations and menu development across cafés, restaurants, pubs, nightclubs and cocktail bars. Joining Ahi in 2020 as its founding Head Bartender, he now serves as Beverage Manager for the group. Drawing on classic cocktail training, Anton leads the team in crafting creative, high-quality beverage experiences that showcase the finest ingredients and producers from New Zealand.

We are incredibly passionate about telling the New Zealand beverage story. We source products from across the country that share our ethos and commitment to provenance, with a particular focus on the exceptional spirits and craft beers produced locally within the North Island. Our passion is to share the stories of our favourite producers, showcasing everything from limited edition releases to hidden gems.
